Fried bakes are one of the most popular eats in St. Lucia, and it is also referred to as “float” or Johnny cakes. It is a straightforward recipe that is made by deep-frying a circular piece of dough like a doughnut but without the hole in the middle. One of my favourite eats just love them for breakfast tea or dinner.
Here some i made for lunch with onion and garlic relish with tomatoes on the side just a quick, something to eat.

Fried bakes consist of a few straightforward ingredients, including flour, salt, and sugar.
Although they are called bakes, they are fried and not placed in an oven to bake. When the fried dough is cooked, it gets a golden brown color and floats to the surface of the frying pan.
INGREDIENTS
260 g self-raising flour
1 tbsp baking powder
1/4 tsp salt
1 tsp sugar
1 tsp unsalted butter
300 ml sunflower oil - for frying
250 ml water
Fried Bake:
Instructions:
Sift the flour, salt, sugar and baking powder into a bowl.
Add enough water and the butter to make a soft dough.
Knead for about 10 minutes.
Leave to rest for at least 30 minutes.
Divide the dough into 6–8 equal portions.
Flatten each portion to a diameter of 12.5–15 cm/5–6 inches and 0.5 cm/1⁄4
If necessary, add flour or oil to your hands to prevent the dough from sticking.
Fry in hot oil until golden brown, turning once.
Remove the fried bake from the oil and place on kitchen towel to remove
