Pear French Toast

This classic but elegant french toast is rich and flavorful, and a few small upgrades makes it the best ever! Absolutely delicious treat.
For me, the best french toast must be thick and fluffy, have great flavor, and be piled high with lots of great toppings.

This delicious treat has all the bits, rum pear vanilla, greek yoghurt mascarpone with raspberry compote and fresh, raspberries, and blueberries with a sprinkling of almonds and walnuts.
Ingredients
Butter or oil , for frying
2 large eggs
1 cup whole milk (250 ml)
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon grated lemon zest
4 thick slices of quality white bread
2 dessert Pears
Topping
Maple syrup
1 tbs Rum
Greek yoghurt
Mascarpone
Almonds and walnuts
Fresh berries
Iceing sugar
Instructions
Warm a large skillet over medium heat and grease with butter and oil in a wide shallow bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon and lemon zest.
Dip slices of bread into the mixture, letting them soak for a few moments. Lift them out of the mixture, letting the excess drip back into the bowl.
Cook in the hot skillet until golden brown, about 3-4 minutes per side.If desired, keep warm in a 200° oven until ready to serve.
Add the maple syrup and rum, vanilla to a and warm up and them add the pear to the mix.
To plate up mix the mascarphon yoghurt and icing sugar, vanilla and pop on the french toast.
Place the pear and drizzle the syrup over the pear add the almond and walnuts on top.
